Stuffed Jalapeno Poppers

blogjalapenopopper I’m not sure why, but on Sundays I always want to eat things that are sinful and bad for my health.  Chicken wings, chocolate, cheese and chips always seem to be on my Sunday menu.  I try to eat relatively healthy every other day of the week so Sunday is my day to be bad.  A girls gotta have a little fun, right?

So, it’s no surprise that Stuffed Jalapeno Poppers was the dinner item on offer tonight (heard no complaints from the hubby).  This recipe, compliments of Food Network Canada is incredibly easy to make and sure to be a hit at any party.  

Ingredients

10 jalapeno peppers

1/4 cup light cream cheese

1/4 cup salsa

1/2 cup shredded cheddar cheese

3/4 cup fresh breadcrumbs

2 tbsp chopped parsley

2 tbsp butter, melted

 

1.  Preheat oven to 350 degrees

2.  Cut peppers in half, lengthwise (recipe suggests wearing gloves, but I skipped that part)

3.  With a small knife cut out seeds and membranes, leaving stems intact.

4.  In a bowl combine cheddar cheese, cream cheese, salsa and 1/4 cup of the bread crumbs.

5.  Spoon filling into each pepper half

6.  In a small bowl, toss together remaining bread crumbs, parsley and butter.

7.  Top each jalapeno with a little of the bread crumb mixture (make ahead: cover and refrigerate for up to 24 hours)

8.  Bake in oven for 20 minutes or until topping is golden and crisp.

Makes 20 poppers.
